Savory shiitake walnut taco “meat” is the star of this salad, and zippy cilantro lime dressing gives it a fresh finishing touch. Enjoy this salad as a meal on its own, or serve it as a starter with fajitas or tacos.

This plant-based riff on a classic Cobb salad swaps baked tofu for chicken breast and smoky toasted coconut for bacon. A creamy, tangy dressing ties it all together.

Roasting cherry tomatoes gives them an intense sweet & savory flavor that’s fantastic alongside eggplant, arugula, and nutty farro.

Once you start bringing home those juicy farmers market heirloom tomatoes, make this salad! It’s my non-traditional take on fattoush, a bread salad made with toasted pita. Corn Summer Salad Recipes

If tomatoes are #1 in the summer, corn comes in as a close #2. Grilled, steamed, or fresh off the cob, it’s the perfect addition to all sorts of summer salads.

This fresh corn salad features all my summer favorites: grilled sweet corn, juicy peaches, and lots of fresh basil! To highlight the crisp, fresh ingredients, I toss it with a zesty chile lime dressing.

If you’ve ever had Mexican street corn, you know that the combination of charred corn, crumbly Cotija, creamy mayo, and cilantro is a hard one to beat. I like to spice mine up with sriracha or adobo sauce, too!

Summer Panzanellas

Panzanellas are hands down my favorite summer salads. You just can’t beat big cubes of bread tossed with juicy summer produce and a good tangy vinaigrette. You can always serve these salads as a side, but they’re great main dish options as well.

Panzanellas may be Italian bread salads, but this recipe’s not all about the bread. Crisp, juicy sweet corn is front and center, playing perfectly off a tangy dressing and bitter greens. I use the corn raw, so this panzanella is super simple to toss together.

Grilled peppers add a lovely sweetness to this veggie-packed summer salad. Along with the veggies, creamy fresh mozzarella makes it extra yummy.

I like to call this one an “everything summer salad.” It’s bursting with juicy peaches, tomatoes, crisp corn, and fresh basil – the best that summer has to offer.

When you’ve made zucchini bread, zucchini cake, baked zucchini, and zucchini pizza, and you STILL have zucchini, make this panzanella. The grilled squash is a great jammy contrast to crisp cucumbers and bursty cherry tomatoes.

Potato Salad Recipes

It’s taken me a while to get on board with potato salad, but over the last few years of experimenting with bold dressings and different mix-ins, I’ve become totally hooked. Here are a few of my favorites.

This lightened-up rendition of classic potato salad has a luscious Greek yogurt dressing with just a bit of mayo mixed in. It’s the perfect make-ahead salad, as the flavor deepens as it sits in the fridge.

Fruity Summer Salads

Of course, your summer salads should feature the wonderful fresh vegetables we have at this time of year, but it’d be remiss not to take advantage of the fantastic fruits that abound too! Stone fruits, berries, and melon are all delicious sweet additions to summer salad recipes.

Skip the tomatoes the next time you’re making tabbouleh, and use dried tart cherries instead! They add great chewy texture and sweet/tart flavor to this fresh dish.

Or…use strawberries! Like tomatoes, they’re juicy & sweet. Another nontraditional ingredient – feta – adds a great salty contrast to the berries in this recipe.

This poke-inspired summer salad features juicy cubes of watermelon and crunchy macadamia nuts along with conventional poke fixings like cucumber, ginger & avocado. I toss it all in a tangy tamari-lime dressing to make a super fresh, fun summer dish.

Though tossed salads are a great way to add a healthy touch to your lunch or dinner time, they often get a bad rap for being bland or boring. Not this time! Packed full of delicious mix-ins like grated carrots, juicy peaches, crumbly goat cheese and so much more, these 50 unique salad recipes make the perfect side for all your grilled mains this summer. Keep reading to find your favorite one or go ahead and make a new combo with every BBQ — either way you'll be screaming for the salad bowl!


1. Spicy Carrot Salad: Microwave grated carrots and minced garlic in 1/4 cup water until crisp-tender. Drain toss with lemon juice, olive oil, salt, red pepper flakes and parsley.

2. Asian Apple Slaw: Mix rice vinegar and lime juice with salt, sugar and fish sauce. Toss with julienned jicama and apple, chopped scallions and mint.


3. Tomato-Peach Salad: Toss tomato and peach wedges with red onion slices. Drizzle with cider vinegar and olive oil season with sugar, salt and pepper.

4. Creole Green Beans: Combine blanched thin green beans and red onion slices. Toss with Creole mustard, red wine vinegar, olive oil, salt and pepper.

5. Herb Salad: Whisk 1 part lemon juice with 3 parts olive oil, and salt and pepper. Toss with dill, basil, chives, tarragon and lettuce.


6. Squash and Orzo Salad: Sauté zucchini, yellow squash and scallions in olive oil until tender. Toss with cooked orzo, parsley, dill, goat cheese, salt and pepper.

7. Champagne Greens: Whisk 1 part champagne vinegar with 3 parts olive oil, and salt and pepper. Toss with Boston lettuce.

8. Watercress-Fruit Salad: Toss peach wedges and watermelon cubes with watercress. Drizzle with olive oil and lemon juice season with salt and pepper.

9. Caesar Salad: Purée minced garlic and anchovies, lemon juice, Worcestershire sauce, salt, pepper and 1 egg yolk with machine running, slowly add 1/4 cup olive oil. Toss with romaine top with Parmesan and croutons.

10. Hearty Tuna Salad: Mix cannellini beans, capers, pickled mushrooms, celery and olives stir in mustard, lemon juice, salt and pepper. Toss with cherry tomatoes and oil-packed tuna.

11. Southwestern Cobb: Purée equal parts mayo and buttermilk with hot sauce, cilantro, scallion, orange zest, garlic and salt. Drizzle over romaine, diced avocado and jicama, orange segments and crumbly sharp cheese.

12. Tomatoes with Mint: Sprinkle heirloom tomato chunks with salt, pepper and sliced shallots set aside 5 minutes. Top with fresh mint drizzle with olive oil and white wine vinegar.

13. Chickpea Tapas: Mix chickpeas, capers and green olives with chopped chorizo, celery, red onion, parsley and cilantro. Toss with olive oil, salt and pepper top with manchego.

14. Pasta Caprese: Mix chilled cooked fusilli, diced mozzarella, chopped tomatoes, basil, toasted pine nuts and minced garlic season with salt and pepper.

15. Chicken-Mango Salad: Whisk 1 tablespoon each lemon juice and honey, some grated ginger and 1/4 cup olive oil toss with shredded grilled chicken, mesclun greens and diced mango.

16. Oranges with Mozzarella: Stack mozzarella and orange slices with basil. Drizzle with olive oil season with salt and pepper.

17. Dilled Egg Salad: Mix mayo, dijon mustard, dill, and salt and pepper. Stir in coarsely chopped hard-boiled eggs and diced dill pickles.

18. Cantaloupe Carpaccio: Slice cantaloupe extra-thin (a mandoline works best). Drizzle with olive oil and lemon juice top with pepper and ricotta.

19. Three-Bean Salad: Boil 1/3 cup cider vinegar, 1/4 cup each sugar and vegetable oil, and salt. Pour over blanched green and wax beans, kidney beans and red onion slices marinate 1 hour. Season with salt and pepper top with parsley.

20. Greek Cucumber Salad: Mix red onion slices, chopped cucumber, kalamata olive halves, dill and feta. Dress with olive oil and lemon juice season with salt and pepper.

Mint is always the first thing to pop up in my garden each spring, and I have tons of it growing right now. I love adding it to salads. If you’re like me and have a lot of it, too, then this quinoa salad will be an excellent way to use it up! The mint combined with quinoa, dried cranberries, fresh kale, and lemon juice results in a very flavorful salad that is also super easy to make. When making quinoa to use in salads, I don’t like mushy quinoa. I have a couple of tips for cooking fluffy, delicious quinoa.

  • Rinse: Make sure to rinse your quinoa before cooking it. Quinoa has a coating that can make it taste bitter when cooked, but a quick rinse in a mesh strainer will remove it.
  • Water to Quinoa Ratio: Most package directions say to use two cups of water for every one cup of quinoa. I think quinoa tastes better with less water.
  • Use Tricolor or Red Quinoa: The texture is firmer and best for adding to salads.
  • Instant Pot: You can also make perfect quinoa in the Instant Pot.

What You’ll Need To Make My Big Italian Salad

I suggest buying pre-washed romaine hearts so you don’t have to bother rinsing the leaves. If you buy a full head of romaine, be sure to dry the leaves completely after rinsing, otherwise the wet leaves will turn the dressing watery. I’m a big fan of salad spinners for this task, but if you don’t have one, a clean kitchen towel or paper towels both work well.

As for the veggies and cheese, I love a colorful mix of bell peppers, grape tomatoes, carrot ribbons, olives, cucumbers and a salty, tangy cheese such as ricotta salata or — if I’m in a Greek mood — feta. But feel free to improvise with whatever vegetables and cheese that you like.

Caprese Salad

Everyone loves a Caprese salad filled with mozzarella, tomatoes, and basil and this is a portable way to bring enjoy the deliciousness at work. This combo includes some pasta to make it extra satisfying. You can also add some grilled chicken to bump up the protein.

Start with a simple mixture of olive oil and balsamic vinegar. A balsamic reduction tastes extra delicious and adds a little sweetness.

  • 2 tablespoons olive oil
  • 2 teaspoons balsamic reduction
  • 1/2 teaspoon salt
  • 1/2 teaspoon of pepper
  • 1 tablespoon chopped fresh basil
  • 1/2 cup cooked pasta, the shape of your choice!
  • 1/2 cup diced fresh mozzarella (You can also use the little pearl mozzarella.)
